We invite you to take part in Cook & Taste Tenerife’s Traditional Spain Cooking Course.

Learn the basics of a gastronomy so many have fallen in love with and which continues to seduce good food lovers from around the world.

What recipes will we be cooking together in our Traditional Spain Cooking Classes?

We’ll prepare five different dishes:

Gazpacho Andaluz: a light summer soup made with fresh raw local vegetables, seasoned with olive oil and vinegar, and served with “trompezones” or bread croutons.

Tortilla de patatas: one of the most iconic dishes in Spanish cuisine, an example of the power of simplicity and natural ingredients.

Paella de Mariscos: the most emblematic dish of our gastronomy and probably also the most debated (ask Jamie Oliver!) – seafood paella.

Tosta con pan artesanal: (or its Catalan counterpart, Pa amb Tomaquet). Discover the amazing flavour of Canary Islands’ roasted flour combined with an emulsion of local tomatoes and olive oil.

Mousse de Gofio: an exquisite dessert typical of the Canary Islands made with milk, flour, lemon, eggs, sugar, butter, raisins, almonds and cinnamon.

Canary Islands Tapas Cooking Classes

What recipes will we cook together in our Canary Islands Tapas Cooking Classes?

We’ll prepare four tapas and a dessert:

“Wrinkled Potatoes” and Canarian Mojos: On their own or as a side, wrinkled potatoes are synonymous with the Canary Islands and with beautiful island simplicity. Served with various canarian mojos – the archipelago sauce par excellence -, you’ll be surprised by the spiciness of this playful combination!

Octopus “Salpicón” with lime air: a very light tapa bursting with island flavours! We’ll top it off with an exquisite “lime air” so you can learn to cook one of the most sophisticated elements of today’s cuisine.

Fish ball in wine sauce: The modern adaptation of a canary classic, we’ll accompany the fish balls with a velvety local wine mirror.

Teror chorizo with caramelised apples, palm syrup and Majorero cheese. A sublime combination of local ingredients that you can easily adapt to the ingredients in your pantry back home.

Egg Flan and Dark Caramel: Everyone claims to know how to make egg flan but we’ll teach you the recipe passed on from Spanish grandmothers around the country – because we don’t want it to get lost amongst so many different versions!

We’ll prepare five different tapas:

Salmorejo from Cordoba: a light summer soup prepared with raw local vegetables, a pinch of garlic, seasoned with olive oil and vinegar, served with diced Iberian ham.

Patatas Bravas with Alioli: one of the most iconic dishes of Spanish cuisine, an example of the power of simplicity and natural ingredients.

Galician style octopus with smoked paprika and olive oil air: Galicia served on a plate for you! Plus, we show you how to prepare one of the most intriguing elements of contemporary cuisine: an “air”, this time, flavoured with smoked paprika and olive oil.

Grilled Basque Bellypork (Iberian pancetta) Pintxo on a bed of beetroot humus. An exquisite combination that unites the traditional Basque Pintxos to the North African influence present in the south of the peninsula.

Crema catalana: an exquisite dessert typical of Catalonia that combines egg yolks, lemon and cinnamon (among other ingredients) and sprinkled with sugar burned with a hot iron plate.
